Artichoke or Mushroom Surprise

For 3 people,

Ingredients: • 400 g BRANDADE de NIMES (Creamed salt cod) • 8 artichoke bottoms or 6 large mushrooms (porcini or button mushrooms) • 1 tbsp oil • 1 knob butter • 4 cloves garlic • 100 g grated gruyère (or breadcrumbs) • 1 tbsp crème fraîche (soured cream) • 3 thin slices streaky bacon • salt and pepper

(Blanch the artichoke bottoms). Gently fry 6 artichoke bottoms or 6 mushroom caps in the oil and butter. Fry on both sides until golden, then drain on a kitchen towel.
In the meantime, fry the chopped garlic in the olive oil, thinly slice the last two artichoke bottoms or mushroom stalks. Combine all the ingredients with the creamed salt cod and crème fraîche.
Place the artichoke bottoms or mushroom caps in a gratin dish and fill with the creamed salt cod mixture, decorate with ½ slice streaky bacon placed in the form of a cross.
Season lightly with salt and pepper. Sprinkle with gruyère or breadcrumbs and brown the top in a moderate oven for 15 minutes (200° - TH. 5/6).
